Three Traditional Irish Recipes
Irish cooking is quite notable for being hardy as well as consisting of cheap, everyday ingredients. The recipes I have included below are a few of my favorites and are quite easy to make. If you are looking for a filling and nutritious family dish, try these recipes and give your family a peek at traditional Irish fare!
Dublin Coddle
Ingredients:
1lb sausages
8 ounces bacon
1 cup water
6 medium potatoes
2 medium onions
salt and pepper
Directions:
Cut the bacon into squares about 1-inch in size. In a saucepan, bring the water to boil and add the sausages and bacon. Cover and allow them to simmer for about 5 minutes. Remove the meat from the saucepan, but keep the water. Cut the sausages into quarters. Peel the potatoes and slice thickly. Skin and slice the onions. In a saucepan, assemble a layer of potatoes, followed by a layer of onions, half of the sausages and bacon, and then repeat the layering. Finish off with a layer of potatoes. Pour the retained water (from the sausages and bacon) over the layering and season lightly. Cover and simmer on a low heat for about an hour. Adjust the seasoning to taste before serving.
Corned Beef and Cabbage
Ingredients:
5 lbs corned beef brisket
1 large onion
6 carrots (peeled and slice)
8 new potatoes (peeled and cubed)
2 heads of cabbage (quartered)
1/2 pint whipping cream
3 tbsp horseradish
6 whole cloves
Dried thyme (to taste)
Bunch of parsley
Embed the cloves into the onion in different places. In a large pot of water, bring the beef, potatoes, carrots, onion, thyme, and parsley to a boil. Reduce the heat to low, cover, and allow the stew to simmer for about 3 hours. Remove the thyme, parsley, onion, and any sedimentary bits floating on the top. Add the cabbage, cover, and simmer for another 20 minutes, or until the cabbage is thoroughly cooked. Remove the meat from the pot and divide it into pieces. Remove the cabbage and season heavily with pepper. Place the beef on a large serving plate and surround it with the cabbage, potatoes, and carrots. Whip together the cream and horseradish sauce and serve in a dipping bowl.
Soda Bread
Ingredients:
4 cups plain flour
1 tsp salt
1 tsp baking soda
1 tsp sugar (optional)
2 cups buttermilk
In a large bowl, blend together the flour, salt, baking soda, and sugar. Run the ingredients through a sieve/sifter before adding to the bowl, if possible. Add the buttermilk and mix well to form a soft dough. Knead the dough lightly—be sure not to over or under work it. Form a loaf (about the thickness of a fist) and place it on a floured surface. Dip a knife in flour and cut an X into the top of the loaf. Place on a cookie sheet and bake at 450 degrees F for 30 - 45 minutes. To test for doneness, tap on the bottom of the loaf—if it sounds hollow, then it's done. Wrap the loaf in a clean towel to prevent the crust from becoming too hard.
