The Best Way To Make The Ideal Cup Of Tea
There are all kinds of tea available right now, but they will only taste great if you brew them properly. Using the wrong technique on the best of teas can turn something delicious into something that tastes like dirty dishwater.
Black teas are the most robust. Their rich, astringent flavor can be enjoyed on its own, or with milk and sugar (such as English or Irish Breakfast), or with lemon (such as Earl Grey). Black-teas generally contain about half the caffeine of coffee, but decaffeinated options are very common now and usually quite tasty.
Black-teas are dried and cured leaves, so it takes boiling water and time (three to six minutes steeping time) to unlock the optimal flavor. Be patient when steeping it: if you are using loose leaf, wait until you see the leaves uncurl. If you're using the bagged sort, wait until the water turns a uniform color without stirring.
Green teas are delicious, and have half the caffeine of black. From Gunpowder (a smoky, bold flavor) to the wide range of jasmines (light, flowery flavors), green-tea is definitely for the person with the discerning palate, and a lot of tea-tasting time on their hands.
Green-tea is easily ruined by brewing in water that is too hot. Water should not be more than 160 degrees Fahrenheit in order to preserve the vibrant green color and subtle flavor. Brew no more than three or four minutes, then use the leaves to brew up another pot!
White tea is just recently becoming popular. It has an even more delicate flavor than green, and has almost no caffeine in it. It should be steeped in water just slightly below boiling for between four and six minutes.
There are hundreds of varieties of herbal teas. Not only are herbal-teas delicious, but many of them claim to have healing properties. Chamomile has a light floral or grassy flavor and is said to be relaxing. Mint kinds supposedly calm the stomach. Fruity vaieties like lemon and orange wake you up (without caffeine) and are a source of vitamin C. Generally speaking, herbal teas should be brewed at a lower temperature than black (slightly less than boiling), but longer than green (four to five minutes).
Tea is a delightful way to enjoy something truly good for you. It takes a little practice, but the best cup of tea is brewed when you slow down and take time to do it for yourself.

In fact, there is a common saying among the Irish that a proper cup of tea should be ''''strong enough for a mouse to trot on''''. Irish Breakfast, with its robust flavor, is usually enjoyed only in the morning (except for the Irish who drink it all day). Usually it is blended with an Assam tea base. Assam is a district in northeastern India that lies on the Indian-Burmese border. It produces more black tea than any other area on earth, with the probable exception of a few places in China. Assam’s tea gardens cover some four hundred thousand acres of verdant rolling plains on both sides of the mighty Brahmaputra River. Assam is proof that not all fine quality tea has to be high grown. This rainy valley is the birthplace of Indian tea. Robert Bruce discovered the plant growing wild here in 1823, and the first commercial lot of tea ever produced outside of China--eight chests in all--came from Assam in 1839. For our Irish breakfast tea, we use high quality, full bodied, robust Assam teas. The resulting blend is a dark brown tippy leaf that brews up a deep red liquor that is hearty, malty and rich in flavor. This tea is delicious with milk and sugar. |

The leafy grades are flowery pekoe (FP), orange pekoe (OP), pekoe (P), pekoe souchong (PS), and souchong (S).
